If you like cheese, you are going to adore quesadillas. Chavindeca is a type of quesadillas. A quesadilla is basically cheese inside a corn or flour tortilla, fried until the tortilla is crispy and the cheese oozes out the sides. This is a great breakfast, lunch, or snack. There are many quesadilla recipes and spinach, mushrooms, tomato, chilies, beef, steak, blue cheese, and even fruit might feature in exciting quesadillas recipes. This is one of the easiest traditional food items to make and for a basic quesadilla you only need two ingredients.

Think of all of the dishes which come from Latin American and Caribbean cuisine, for instance. In this part of the world, combining succulent, sweet tropical fruits with savory ingredients is both commonplace and delicious.

Chavindeca Recipe with Grilled Chicken

This is a delicious Mexican chavindeca recipe made by seasoning boneless chicken thighs and grilling them to perfection, then layering tortillas with grilled chicken, onion, and cheese. The quesadillas can be cooked right on the grill, making them an excellent choice for outdoor cooking. Of course, you do not have to wait for grilling season either. Use an electric indoor grill instead if you want to, and you can produce just as great results. If your grill is not right for making quesadillas, then you can make these chicken tortillas in the oven.

The mixture of chicken, adobo seasoning, cheese, onion, and chilies is a wonderful one. Adobo is a marinade or hot sauce used in Mexican and southwestern cuisines. Actually, “adobo” means marinade or sauce in Spanish. This sauce is dark red and it contains chilies, as well as perhaps vinegar, garlic and bell pepper. Onions, tomatoes, spices and herbs are common in adobo and there are various types. Hot chilies are often packed in adobo sauce.

Serve these delicious quesadillas with sour cream and salsa to taste. Everyone loves these great grilled chicken quesadillas. For a wine to drink with this dish, try Sauvignon Blanc. For a cocktail, fizzy lime vodka and, for non-drinkers, raspberry lemonade!

Chavindeca

Ingredients

  • 1 pounds boneless chicken thighs
  • adobo seasoning to taste
  • 12 ten inch flour tortillas
  • 1 ½ cups shredded cheese
  • 1 onion, chopped
  • 1 seven ounce can green chilies, drained and diced

Preparation

Coat chicken with adobo seasoning to taste on both sides and allow marinating for fifteen minutes.

Heat grill to medium high and lightly oil the grate or surface. Cook chicken for ten minutes on each side, or until the juices run clear.

Allow to cool to handling temperature, then cut into bite-sized pieces.

Place tortillas on grill and sprinkle each with cheese. Add chicken, olives, onion and chilies, then top with another flour tortilla.

Grill until crisp and brown on both sides.

Repeat until ingredients have been use up. Cut into wedges and serve.
