CAVA has tasty braised lamb and they’re spiced & braised for 3-4 hours. Braised lamb is not available in every store but lamb meatballs are nationwide. It combines great with feta & roasted eggplant. Braised lamb is also halal.

Braised lamb recipe

This is perfect for a special occasion if you want to make a very impressive meal that everyone is going to love. 

we’re going to begin by seasoning the lamb shanks on both sides with salt and pepper. so I have a cast iron enamel coated pan that’s heating over medium high heat. I’m going to add about three or four tablespoons of olive oil to it. This is going to help sear the lamb shanks and create beautiful color on them.

So once the oil is nice and hot go ahead and add the lamb shanks in. try not to overcrowd the pot.

Braised Lamb

let them sit about three or four minutes on each side until they develop that beautiful brown color. While the lamb chunks were cooking, I went ahead and I just roughly chopped one onion, two potatoes, two carrots and two stalks of celery.

Once the lamb shanks are nicely browned, go ahead and transfer them to another pan or plate and then carefully add the veggies to the pot.

Season with a little bit of salt and then cook them for about eight to ten minutes until they get a little bit of color on them. Next I have six cloves of grated garlic, three tablespoons of balsamic vinegar, crushed tomatoes, two bay leaves, a teaspoon of ground cumin for earthiness and warmth, two sprigs of rosemary / thyme, some crushed red pepper flakes for heat, a little bit more salt, black pepper and half teaspoons of dried oregano 

The lamb shanks are going to go back in and then I’m going to cover them with water. You could use beef broth or even chicken stock &  some tomato sauce if you want. The oven is preheated to 350 degrees Fahrenheit. This is going to go in the oven covered. It’s just going to bake for two and a half to three hours. it can go up to three and a half hours if your lamb shanks are very meaty. 

Once they come out of the oven you can serve them.
